Turkey Picatta with Mushrooms &Shallots

Diestel product: Diestel Hot Italian Turkey Sausage, Diestel 100% Ground Turkey

Ingredients:
12 oz. bulk Diestel Hot Italian Turkey Sausage
3 cups onions, chopped
1 cup green bell pepper, chopped
8 garlic cloves, minced
1 pound Diestel 100% Ground Turkey
1 chipotle chili in adobo sauce, drained, seeded, chopped
2 tablespoons chili powder
2 tablespoons brown sugar
1/4 cup tomato paste
4 tsp. ground cumin
1 tsp. dried oregano
1/2 tsp. ground black pepper
1/4 tsp. salt (or to taste)
2 bay leaves
1 1/4 cups red wine
3-14 oz. cans of diced tomatoes, undrained
1-15 oz. can kidney beans, drained
1-15 oz. can black beans, drained
1/2 cup shredded cheese

Directions:
Heat a large pot over medium-high heat. Add sausage, onion, bell pepper, garlic and ground turkey. Brown approximately 8-10 minutes, stirring frequently. Add chipotle chili, chili powder, brown sugar, tomato paste, cumin, oregano, pepper, salt, and bay leaves; cook 1 minute, stirring constantly. Stir in wine, tomatoes and both cans of beans; bring to boil, cover, reduce heat, simmer for 1 hour, stirring occasionally. To thicken, uncover and cook 30 minutes. Discard bay leaves. Sprinkle each serving with cheese.

Serves 8.
